Roadtrippin’ 2024: Taste testing one of Alaska's ‘freshest salads’

FAIRBANKS, Alaska (KTUU) - Using their geothermal-powered hydroponic greenhouse, Chena Hot Springs Resort grows fresh produce year-round to use in its restaurant.

When guests flip through the resort’s restaurant menu, they will see a variety of dishes that use “Chena Fresh” items, such as lettuce and tomatoes. To grow lettuce, Greenhouse Manager Emma Fisher notes that it takes between 50 to 70 days to harvest depending on the time of the year.

Fisher says there is a noticeable difference when tasting locally grown food.

“The lettuce has more crunch. The tomatoes are just more acidic and yummy,” she said.

Hearing this, our Roadtrippin’ team decided to put the “Chena Special” — a salad that consists of “Chena Fresh” greens and “Chena Fresh” tomatoes — to the ultimate taste test.
